Delicious And Good For You Nearly Vegan Peanut Butter Cookies

1. Cream 1/2 Cup Margarine.

2. Add & Cream 1 1/2 Cup non-sweetened unsalted natural Peanut Butter.

3. Add & Mix 1 1/2 Cup Honey and 3-4 Tbsp Vanilla. Sift & Mix In:

  • 2 Cups Integral Flour
  • 1-1 1/2 Cups Oats
  • 1/2 Cup Ground Flax
  • 1/2 Cup Organic Soy Milk powder or Organic Soy Protein powder
  • 1/2 Cup Amarenth (whole, puffed)
  • 1/2 tsp. Salt
  • tsp. Baking Powder


4. Mix well. If dry, add a little water until moist enough so that dough sticks together.

5. Roll into balls and place on oiled cookie sheet, flatten with fork that has been dipped in water.

6. Cook at 350F for 15 minutes.
